Ponzu Sauce
Ponzu is a versatile Japanese seasoning sauce that is a refreshing blend of soy sauce and citrus juice (often yuzu, sudachi, or lemon), complemented by dashi (fish stock), mirin, and vinegar, giving it a complex, umami-rich flavor with a sour and spicy note. It is used as a dip for sushi, sashimi, shabu-shabu, grilled vegetables or meat, and as a dressing.
