Yakitori Sauce

Yakitori sauce (also called tare) is a sweet and salty Japanese marinade consisting mainly of soy sauce, mirin (sweet rice wine), sake, and sugar. It is ideal for glazing and seasoning grilled chicken (yakitori) and vegetables to create a caramelized, savory, and umami-rich coating. It is a type of teriyaki sauce, but often with a stronger focus on balance through mirin and sake.

Ingredients: Soy sauce (water, soybeans, wheat, salt), glucose, broth seasoning (water, rice), sugar, salt, hydrolysed soy protein, tapioca starch, flavour enhancer (E621), colouring (E150d)

Use as a marinade:

Although the sauce is often only applied as a glaze during grilling, it is also frequently used as a classic marinade: 

Marinating: Ideally, the meat should be marinated in the cooled sauce for at least one hour (preferably overnight) to tenderize it and allow the flavor to penetrate deeply.

Caramelization: When grilling, the sugar in the sauce creates a shiny, slightly charred crust.

Dipping: Can be used as a dip for finished skewers.

*Important note: If the sauce has been used as a marinade for raw meat, the rest should not be used as a dip without being cooked. A separate portion should be set aside for basting during grilling.

Difference from teriyaki sauce:

Yakitori sauce is closely related to teriyaki sauce, but in Japan it is used specifically for chicken. While teriyaki sauce is often seasoned with garlic or ginger, traditional yakitori tare is usually simpler in flavor to emphasize the natural taste of the meat and the smoky notes from the grill.
